No-Knead Ciabatta Bread




Saw this "No-Knead Ciabatta Bread" recipe on youtube
So easy, all you need to do is mix and wait.
it taste very good like the store bought!

Here is the recipe
Mixing the following ingredient and let it rise for 18 hour, room tempture

4 cup of Flour

Half a cup of wheat flour

1/4 tsp of yeast

1.5 tsp of salt

2 cups of warm water


After 18 hour rise, you will get a very bubble and very soft dough


Oil a cookie sheet pan and sprinkle corn meal over the cookie sheet pan


On a working surface, spray some water on the surface and then put a plastic warp on top (it will secure the plastic warp from moving)


Sprinkling some flour on the plastic


Shape the dough to a long flat shape


Move the plastic warp with the dough to the cookie sheet pan and flip it over to the pan


Sprinkel some flour on top of the dough and cover it with cotton towel and let it rise for 2 hour


And then put the bread to the a 425F preheated oven and bake for 35-45 mins

Lemon Yogurt Cake



XD take me so long to update my blog now. Got a new full time job and then no time to cook like b4.

I did cook sometime but doing the same thing (like HK style BBQ bun, banana cake) so i didnt post it!

Today I made a new Cake, which taste very good! so want to share with u guys !

I got the recepie from FoodNetwork! Enjoy

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup plain whole-milk yogurt
  • 1 1/3 cups sugar, divided
  • 3 extra-large eggs
  • 2 teaspoons grated lemon zest (2 lemons)
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup vegetable oil
  • 1/3 cup freshly squeezed lemon juice

For the glaze:

  • 1 cup confectioners' sugar
  • 2 tablespoons freshly squeezed lemon juice

Directions

Preheat the oven to 350 degrees F. Grease an 8 1/2 by 4 1/4 by 2 1/2-inch loaf pan. Line the bottom with parchment paper. Grease and flour the pan.

Sift together the flour, baking powder, and salt into 1 bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, lemon zest, and vanilla. Slowly whisk the dry ingredients into the wet ingredients. With a rubber spatula, fold the vegetable oil into the batter, making sure it's all incorporated. Pour the batter into the prepared pan and bake for about 50 minutes, or until a cake tester placed in the center of the loaf comes out clean.

Meanwhile, cook the 1/3 cup lemon juice and remaining 1/3 cup sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside.

When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in. Cool.

For the glaze, combine the confectioners' sugar and lemon juice and pour over the cake.

Apple Bread


This apple bread is very delicious. It gives the taste in between eating apple pie and banana bread. The soft small pieces apple in every bite of the bread make it so delicious. And the good thing is, it is a very easy to bake, same as banana bread, easy to make and will never go wrong! So try to bake it if you have time!

 

8 Tbsp butter

½ cup brown sugar

¼ cup white sugar

2 eggs

1 cup apples

2 Tbsp milk

1 tsp cinnamon

¾ cup all-purpose flour

¾ cup wheat flour

¾ cup wheat germ

1 tsp baking soda

1 tsp baking powder

1 tsp salt

1 cup chopped walnuts (optional)

 

1. Peel and core the apples. Dice into small cubes.

 

2. Soften the butter and mix in the sugar. Add in the eggs and milk and mix completely.

 

3. Combine the flour, baking soda, baking powder and salt in a large bowl and add to the wet ingredients. mix in the apples. don’t over mix; just break up any large clumps of flour and get everything moist. Lightly mix in the optional walnuts.

 

4. Carefully pour into a greased and floured loaf pan and bake at 350 F for one hour. remove from oven and let rest in the loaf pan for 10 minutes before turning it out onto a wire rack to cool.

BRIOCHE ~~~ YUMMY!!!!






I made this Brioche today, very easy to make and very good. I will make it again with more sugar coz I like it more sweet I guess, and I will put less lemon zest. Its good to have some lemon zest but maybe I put too much. The smell is too strong even through it didn’t taste it. Over all I give myself for a B+ for 1st Brioche!

Enjoy

3 1/2 cups flour
1/2 cup sugar
2 packages (1/4 oz each) active dry yeast
1 tsp grated lemon peel
1/2 tsp salt
2/3 cup butter
1/2 cup milk
5 eggs


1. in a large mixing bowl, combine 1 1/2 cups flour, sugar, yeast, lemon peel and salt. in a saucepan, heat butter and milk to 120-130 F. add to dry ingredients and beat until moistened.

2. add four eggs and beat, add one cup flour and beat until smooth. stir in the remaining flour but do not knead. spoon dough into a greased bowl and cover and let rise in a warm place for about an hour.

3. punch dough down, cover and refrigerate overnight.

4. punch dough down and turn onto a lightly floured surface. cover and let rest for 15 mintues. cut 1/6 from the dough and set aside. divide the remaining dough into 12 equally sized balls and place into greased muffin cups. divide the 1/6 of the dough into 12 smaller balls. make an indentation in each larger dough ball and place a small ball into the indentation. cover and let rise in a warm place for about an hour.

5. beat remaining egg and brush over rolls. bake at 375 F for 15-20 minutes or until golden brown. you may also want to put an oven proof bowl of water in the bottom of the oven to keep the brioches moist as they bake.

Vegetable Shepherd's Pie



I was watching foodnetwork yesterday, and one of the host mention about Shepherd's Pie. And I think, ah let make a Shepherd’s pie (XD actually I am not sure what is Shepherd’s Pie at all). I search the net and found few handy recipe. However, I don’t have any ground meat and I am too lazy to buy. So I decide to make a vegetable Shepherd’s Pie! And make maymay version cheating Shepherd’s Pie! lol

Why I say I am cheating coz I use can soup :p I don’t know how to season those vegetable ^^; so lazy me just add a can soup and cheese! Good job! And I got tasty vegetable mix. Add the garlic mash potato on top! Perfect Shepherd’s Pie is ready!

Ingredients
2 Tbs olive oil
2 cloves garlic, diced
1 medium onion, diced
1 large carrots, diced
2 stalk of celery, diced
½ cup frozen corn
½ cup frozen spinach
½ cup half and half
½ cup parmesan cheese
1 can of cream of chicken soup
salt and pepper
2 to 2½ c mashed potatoes
Garnish ideas: paprika, cayenne pepper

Heat 2 T oil over medium heat, add garlic, and sauté for 2 minutes. Add carrot and sauté for 5 minutes then add onion and continue sautéing until soft, another 5 minutes. Add celery, corn and spinach and cook for another 5 minutes. Then stir in the can of soup. Add the half and half, cheese, salt and pepper to taste. Turn the heat off and let the vegetable set aside.
Preheat oven to 350.
Grease pie plate. Arrange vegetables in it, then cover with a layer of mashed potatoes. Garnish.
Bake until bubbly, about 30 minutes. Serve hot.

This is a test run, basically I use same ingredient but random potion of it XD I think it is not so hard like before but still not as soft as the one I buy in store. I tend to believe it’s the bread flour now, I will try to buy other brand and try again, Overall is good!! Will try again when I buy new sausage XD

Chicken Supreme Pizza



Well part time job place get hour cut so very free now, so.... cooking! Today I made Pizza and Cookie. The cookie is good but same as what I made before, so I didn’t take picture and post it.

This Pizza is so good, I finally find a good recipe to make good pizza dough. Here is the recipe

Jay's Signature Pizza Crust

10" Pizza size
3/4 teaspoon active dry yeast
1/8 teaspoon brown sugar
1/2 cup warm water (110 degrees F/45 degrees C) 1/4 teaspoon salt
2 teaspoons olive oil
1 cup and 2 tablespoons all-purpose flour

1. In a large bowl, dissolve the yeast and brown sugar in the water, and let sit for 10 minutes. Stir the salt and oil into the yeast solution. Mix in 2 1/2 cups of the flour.
2.Turn dough out onto a clean, well floured surface, and knead in more flour until the dough is no longer sticky. Place the dough into a well oiled bowl, and cover with a cloth. Let the dough rise until double; this should take about 1 hour. Punch down the dough, and form a tight ball. Allow the dough to relax for a minute before rolling out.
3. Preheat oven to 425 degrees F (220 degrees C). If you are baking the dough on a pizza stone, you may place your toppings on the dough, and bake immediately. If you are baking your pizza in a pan, lightly oil the pan, and let the dough rise for 15 or 20 minutes before topping and baking it.
4. Bake pizza in preheated oven, until the cheese and crust are golden brown, about 15 to 20 minutes.

Note: I brushed some olive oil and added some garlic salt to the flat dough before I add the topping!

I cook my owe Tomato sauce
1/2 Onion diced
1 can 14 oz diced tomato
1 can 8 oz tomato sauce
1 can 6 oz tomato paste
1/4 cup sun dried tomato
1 tablespoon ketchup

It is so good and I cant stop eating it XD so my family and me finished the whole pizza!
