I finally found the unsweetened baking coca at whole food market last weekend XD so I grab it right away. And today I don’t need to work late XD so i decide to make a very chocolate muffin!!!! Double-Chocolate Muffins!
It is not very sweet, since I don’t like thing too sweet and the reason I want to bake my own muffin XD It is because I can control the sugar amount, make it much healthier then the store buy one !!!
Here is the recipe
1/2 cup Oat Meal
1/2 cup Wheat Germ
1 1/3 cups buttermilk
1/4 cup canola or vegetable oil
1 egg
1 cup packed brown sugar
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup unsweetened baking cocoa
1 teaspoon baking soda
1 teaspoon vanilla
1/4 teaspoon salt
1/2 cup miniature semisweet chocolate chips
1. Heat oven to 375°F. Spray a 12 regular-size muffin cups.
2.In medium bowl, mix all the dry ingredients except chocolate chips. In another small bowl, mix all the wet ingredients. Stir in the wet ingredients to the dry one and mix well. Stir in chocolate chips. Divide batter evenly among muffin cups.
3.Bake 15 to 20 minutes or until toothpick inserted in center comes out clean. Immediately remove from pan. Serve warm.
I like it XD smell so good and taste just right, not sweet sweet but full of chocolate favor. Try it and you will like it! <3
