Got a good deal on Walmart. $1.89/lb XD so bought it and cook it for tonite dinner. It tastes good but very fat compare to lamb chop XD but yummy tho!
I just season it with sea salt and pepper and cover it with some pesto.
Preheat the oven to 400 degrees F.
Heat 2 tablespoons oil in a grill pan or heavy large skillet over high heat. Place 1 lamb rack in the skillet and cook just until brown, about 3 minutes per side. Transfer the lamb rack meat side up on a heavy large baking sheet. Repeat with the remaining 2 lamb racks.
Roast the lamb in the oven until cooked to desired doneness, about 20 minutes for medium-rare.
I roasted it for about 30min since i dont like my lamb too rare XD
its good but i guess only eat once every 4 months since its tooooo fat :p

Banana Walnut Muffin Recipe
I want to make this banana muffin for long time but the banana price is keep going up XD used to be 33c/lb but I guess no more :3. Today i finally get to buy some banana and decide to make this! and you know what !!!! this is soooooooooooooo soooooooooo soooooooo yummy. I ate 4 mini muffin today!!!
Try it if u like banana muffin! This is actually Banana Bread in a more convenient form.
Recipe:
1/2 cups all-purpose flour
1/4 cup wheat germ
1 cup whole wheat flour
1/2 cup granulated white sugar
1/4 cup light brown sugar
1 teaspoons baking powder
1/2 teaspoon baking soda
2 large eggs, lightly beaten
8 tablespoons butter, melted and cooled
3 very ripe large bananas (approximately 1 pound or 454 grams), mashed well (about 1-1/2 cups)
1 teaspoon pure vanilla extract
1/2 cup walnut toasted and chopped
Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the middle of the oven. Butter or spray a 12 - 1/2 cup muffin pan.
In a large bowl combine the flour, sugars, baking powder, and baking soda. Set aside.
In a medium-sized bowl combine the mashed bananas, eggs, melted butter, and vanilla. With a rubber spatula or wooden spoon, lightly fold the wet ingredients (banana mixture) and walnut into the dry ingredients until just combined and batter is thick and chunky. (The important thing is not to over mix the batter. You do not want it smooth. Over mixing the batter will yield tough, rubbery muffins.) Spoon the batter into the prepared muffin tins and place a slice of banana on top of each muffin for garnish. Bake about 18-20 minutes or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool for five minutes and then remove muffins from pan. Serve warm or at room temperature.
Note: To mash bananas I have found the easiest way is to just use my fingers, a fork or a potato masher.
Makes 31 mini sized muffins.
Enjoy!

May May Chocolate Muffin!!!
Yesterday after work, I went to 99c store and try to buy tat Muffin mix to make Muffin again.
T.T They are all sold out. So today morning when I woke up and think, how about making it from scratch? So I went to Google ! Foodnetwork! and summarize May May’s version Chocolate Muffin!!!
(Actually I follow the recipe here from foodnetwork : http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_35617,00.html,
however, I found I don’t have enough Flour LOL! so I cut everything to half except Egg :3)
The muffin taste good. The texture more like muffin then the Muffin Mix I did last week. The only thing is XD I put too much chocolate chip!!!!! LOL so it taste like eating chocolate more !!!
BUT I AM A CHOCOLATE LOVER! so this is not a problem for me!
If you want to try here is the MayMay’s version Chocolate recipe:
1 cups all-purpose flour
1 teaspoons baking powder
1/4 teaspoon baking soda
1 tablespoons instant coffee powder ( yes this is something NEW! since I don’t have coco powder!! so I put this coffee powder instead lol, it smell like coffee when u bake it but don’t taste it when eat it!!!! )
1 cup superfine sugar
1 cup semisweet chocolate chips (can cut to half if u dont want it too chocolate lol)
1/2 cup milk
3 teaspoons butter in room temp
1 egg
Preheat the oven to 400 degrees F. Mix all ingredients together, remembering that a lumpy batter makes the best muffins.
Spoon into the prepared muffin cases.
Bake for 10 minutes or until the muffins are dark, risen and springy.
Note: I am using mini Muffin case, so baking time may different, just use a toothpick to test it when you can smell the muffin smell.
I made total 23 mini muffins, I think u can make 24 if you spread it equally XD
Anyway! Enjoy!
